Tilapia, risotto, squash & apples.

What’s on the menu for tonight:

Lemon Garlic Tilapia: from allrecipes.com
Butternut Squash & Apple Casserole: from everythingunderthemoon.net
Italian Herb Risotto: I confess; this came from a box.
Paired with: a delicious white blend from Daveste’ Vineyards

Overall, not a bad meal. I wasn’t quite sure how to saute’ the risotto rice, so it was not quite cooked to perfection. I also believe the tilapia was a little overdone; this is what happens when you try to multitask wii Fit workouts with cooking.

I need to live a balanced life, of course — but perhaps I need to focus on balancing all the items at separate times. :-)
