Baby spinach salad with tuna.

What was on the menu this week:

Baby Spinach & Tuna salad
Paired with Newman’s Own Organic Virgin Lemonade (LOVE this lemonade, but it is NOT a good pair with this particular salad, just FYI)

(I got the idea for this recipe somewhere, but I’ve tweaked and played with it so much that I pretty much consider it my own now. I never measure out the amounts listed below — I just take a stab at what seems right — so I’m guessing how much I actually use here.)

2 1/2 – 3 cups baby spinach leaves
1 2.6 oz pouch of chunk light tuna
1/8th cup crushed walnuts
1/8th cup feta cheese
1/8th cup blueberries (blackberries are also delicious)

Toss all ingredients together and serve with a balsamic vinaigrette salad dressing. Quick, easy, & healthy. Serves 2.
